I loveeee french fries – who doesn’t?! But sometimes we all need a healthy alternative to something like fries. These Oven Baked Zucchini Fries really do the trick – they are crispy and salty, satisfying that craving. And they are super simple to make.
Oven Baked Zucchini Fries – A Healthy Way To “Fry”!

First, Slice The Zucchini
You can use 2-3 zucchini’s or as many as you’d like. You just want to make sure to not crowd the baking sheet when you put them in the oven.
Slice them long ways. I usually cut them in half and then make slices similar to the size of a large fresh fry.

Next, Prepare The Egg Wash And Breadcrumbs
In the first bowl, add your egg. Depending on how many Zucchini you are using, you may need more than 1 egg.
In the second bowl, mix the breadcrumbs with the spices. I kept mine pretty simple but you can definitely mix it up and add any other spices that you’d like!

Coat The Zucchini
One by one, dip the zucchini in the egg wash and then into the breadcrumbs. They only need to be lightly breaded to get a nice crunch on the outside when they get baked.

Line Them Up
Spacing them out evenly, line up the coated zucchini on a baking sheet. I use parchment paper so they don’t stick to the bottom. This is not necessary but is very helpful.

Pop Them In The Oven – Get ready for some yummy oven baked zucchini fries!
Once your oven is preheated, put the baking sheet in. They’ll need about 30 minutes total at 425.

Flip Half Way Through
About 15 minutes into baking, give the zucchini’s a flip and make sure they’re not getting too crisp on one side. You want them to get a nice brown color on both sides evenly.

You can serve these with pretty much anything. Or eat them on their own as a delicious snack.

Ingredients
- 3 Large Zucchini’s
- 2 tbsp Olive Oil
- 1 tbsp Salt & Pepper
- 1 tbsp Paprika
- 1 tbsp Onion Powder
- 1 Egg
- 1 cup Breadcrumbs
Instructions
- Pre-heat oven to 425
- Slice zucchini’s
- In a bowl, mix breadcrumbs, salt, pepper, onion powder, and paprika
- Crack egg into another bowl and mix lightly with your fork
- Line a baking sheet with parchment paper
- Dip each zucchini in the egg then in the breadcrumbs. Line them up on the baking sheet.
- Bake on 425 for 30 minutes – flipping about 15 minutes into the baking process
